Warm kumara dip

1 | Onion | |
1 | Clove garlic | |
1 | teaspoon | Peanut oil |
1 | teaspoon | Prepared chilli |
1 | teaspoon | Ground cumin |
¼ | cup | Stewed apple or canned apple slices |
Directions
Peel kumara and cook in boiling salted water for 20 minutes or until tender.
Drain well reserving ¼ cup of cooking water.
Peel onion and chop. Crush, peel and chop garlic. Heat oil in a frying pan and saut onion and garlic for 5 minutes or until clear.
Add chilli and cumin.
Place cooked kumara, reserved cooking water, onion mixture and apple in the bowl of a food processor blender.
Process or blend adding 2 tablespoons of cooking liquid, until smooth.
Serve warm with fresh vegetables or bread.
