What i think is traditional chutney

Ingredients

4 | cups | Ripe mango; peeled and sliced |
½ | cup | Lime; *seeded and chopped |
1 | cup | Onion; chopped |
½ | cup | Fresh ginger; grated |
3 | Cloves garlic; peeled and minced | |
¾ | cup | White raisins |
2 | cups | Light brown sugar |
1 | cup | Apple cider vinegar |
¼ | cup | Fresh orange juice |
¼ | cup | Fresh lemon juice |
1 | tablespoon | Mustard seed |
1 | teaspoon | Crushed red pepper; * see note |
1 | teaspoon | Ground cinnamon |
¼ | teaspoon | Ground cloves |
Directions
Makes 4 half-pints.
Place all ingredients in heavy pot over medium heat. Bring to a boil. Lower heat & simmer for about 20 minutes, stirring frequently. Remove from heat, cover, & let stand for about 12 hours. Again bring to a boil, lower heat & cook for 15 minutes, stirring frequently.
Process for 15 minutes in boiling water bath.
