White beans with sweet potatoes

Ingredients

Quantity Ingredient
1 each Onion, chopped
2 eaches Garlic cloves, minced
1 tablespoon Olive oil
¼ cup White rice, uncooked
2 eaches Tomatoes, chopped
1 cup Great Northern beans, cooked
1 each Green bell pepper, chopped
2 eaches Sweet potatoes, peeled & cubed
1 cup Water
½ teaspoon Salt
2 tablespoons Parsley, chopped

Directions

Saute onion & garlic in oil until translucent, about 2 minutes. Add rice & saute for 3 minutes. Add the rest of the ingredients, with the exception of the parsley & bring to a boil. Reduce heat, cover & simmer until the rice is tender, about 25 minutes. Garnish with parsley & serve.
