Yoghurt, cucumber and garlic dip (tzatziki)

Ingredients

Quantity Ingredient
1 large Cucumber peeled lengthwise leaving every second strip unpeeled
2 (or 3) Garlic cloves, peeled and crushed with salt with the blade of a knife
1 pounds Thick yoghurt
2 tablespoons Oil
1 tablespoon Vinegar or lemon juice
Sprigs of mint or dill

Directions

GARNISH

Cut the cucumber into very small dice and combine with the garlic and salt. Beat together the yoghurt, oil and vinegar and fold into the cucumber. Spoon the dip into a bowl and garnish with mint or dill.

This can be served with fried eggplant and crusty bread.
