Zama de pasole verde (green string bean soup)

Ingredients

Quantity Ingredient
2 pounds String beans, cut
3 pounds Spring chicken, cut up
2 tablespoons Lard
1 x Onion,large,chop & saute
tablespoon Flour
1 teaspoon Red pepper
1 x Garlic clove
1 cup Onion, small, minced
1 x Parsley, and dill,chop fine
3 quarts Water

Directions

Place lard, onion and flour in a pot, saute, add red pepper, water, chicken and cook. Cook cut up green beans, garlic, and onion in 4 ounces water separately for a half hour, then add to chicken pot and cook for 45 min or more. Add parsley and dill last.
