Applesauce bran muffins

Ingredients

Quantity Ingredient
3 cups Applesauce
2 cups Buttermilk
1 cup Packed br sugar
¾ cup Molasses
¾ cup Veg oil
1 tablespoon Vanilla
3 xes Eggs
3 cups Natural bran
6 cups Flour
1 tablespoon Baking soda
1 tablespoon Cinnamon
1 tablespoon Salt
3 cups Chopped dates

Directions

In bowl, whisk applesauce, buttermilk, sugar, molasses, oil, vanilla, and eggs. Stir in bran, let stand for 5 minutes. In large bowl, combine flour, baking soda, cinnamon, and salt; stir in applesauce mixture. Stir in dates. Spoon into greased muffin cups filling to tops. Bake in batches in 375 degree oven for about 25 minutes or until tops are firm to the touch. Let cool in pan on rack.
