Baked fish with potatoes

1 | Green pepper, chopped | |
3 | Garlic cloves, chopped | |
3 | Bay leaves | |
1 | can | Stewed tomatoes, pureed |
2 | larges | Onions, chopped |
4 | Celery stalks, chopped | |
½ | Bunch parsley, chopped | |
x | Pinch of sugar | |
6 | Potatoes, cut-up | |
x | Olive oil |
Directions
Saute onions, pepper, celery, garlic, and parsley in olive oil. Add blended tomatoes and bay leaves. Cook approximately for 1 hour, add sugar. Oil a roasting pan, season the fish with salt and pepper. Place fish in pan with cut-up potatoes. Pour sauce over potatoes and fish. Bake for approximately 1 hour. Basting every 15 minutes.
