Baked salmon with garlic and herb crust

1 | Clove garlic; finely chopped | |
1 | tablespoon | Dried Marjoram |
4 | tablespoons | Flat leaf parsley; chopped |
3 | tablespoons | Fresh bread crumbs |
4 | tablespoons | Extra virgin olive oil |
½ | teaspoon | Salt |
Ground pepper to taste | ||
1½ | pounds | Salmon fillets; skinned |
Directions
1. Heat the oven to 400 degrees.
2. With a mortar and pestle crush the garlic to a paste. In a small mixing bowl combine the garlic, marjoram, parsley, breadcrumbs, olive oil, and salt.
3. Grind in a little black pepper and stir until you have a paste.
4. Cut the fillet crosswise into four pieces, lightly grease a baking dish with about 2 Tsp. olive oil, arrange the fillets with at least 1 inch apart.
5. Bake the salmon for about 5 minutes, remove from the oven, spread the paste mixture over the fillets and bake the salmon for another 5-10 minutes.
