Banana bread (vegan)

½ | teaspoon | Salt |
¼ | teaspoon | Baking soda |
4 | Ripe bananas, mashed | |
2 | Jars baby food prunes | |
½ | cup | Brown sugar, or less |
Juice of one lemon | ||
Raisins | ||
½ | tablespoon | Baking powder |
1 | teaspoon | Cinnamon |
1 | dash | Allspice |
Zest of 1/2 lemon, or more | ||
2 | Egg substitutes, beaten | |
1½ | teaspoon | Vanilla |
Dried cherries |

WET INGREDIENTS
OPTIONAL INGREDIENTS
Preheat oven to 350.
In large bowl, mix dry ingredients. Combine wet ingredients thoroughly, and add to dry ingredients. Mix until evenly moistened (do NOT overmix). Spread batter into a loaf pan that has been prepared with oil spray.
Bake 45-50 mins til a knife inserted comes clean. Let cool in pan 10 mins, then cool completely on rack.
