Banana bread (vegan)

Ingredients

Quantity Ingredient
2 cups Flour
½ teaspoon Salt
¼ teaspoon Baking soda
4 Ripe bananas, mashed
2 Jars baby food prunes
½ cup Brown sugar, or less
Juice of one lemon
Raisins
½ tablespoon Baking powder
1 teaspoon Cinnamon
1 dash Allspice
Zest of 1/2 lemon, or more
2 Egg substitutes, beaten
teaspoon Vanilla
Dried cherries

OPTIONAL INGREDIENTS

Preheat oven to 350.

In large bowl, mix dry ingredients. Combine wet ingredients thoroughly, and add to dry ingredients. Mix until evenly moistened (do NOT overmix). Spread batter into a loaf pan that has been prepared with oil spray.

Bake 45-50 mins til a knife inserted comes clean. Let cool in pan 10 mins, then cool completely on rack.
