Blackeyed peas & barley

Ingredients

1 Bay Leaf -- broken in half

Directions

20 Oz Blackeyed Peas, Canned -- : rinsed and drained

1 c Onion -- chopped

½ c Celery -- chopped

⅓ c Barley -- uncooked

1 c Nonfat Dry Milk -- or

: substitute

1¼ c Water

⅛ ts Salt

: ts Pepper

¼ ts Dried Thyme

¼ ts Dried Rosemary

¼ ts Garlic Powder

Preheat oven to 350 deg. F.

Lightly spray a 1 ¾ qt casserole dish with nonstick cooking spray.

In a lg. bowl, combine all ingredients, mixing well. Place in prepared casserole.

Cover tightly and bake 1 ¼ hrs, or until barley is tender. Stir once, halfway through cooking time.

Remove and discard bay leaf before serving.
