Braised red cabbage - country living

Ingredients

Quantity Ingredient
2 tablespoons Butter or margarine
1 medium Onion, sliced
1 2 1/2-lb head red cabbage, quartered, cored, & cut into 1/2-inch-thick slices
1 large Cooking apple, peeled, cored, and sliced
½ cup Water
¼ cup Red-wine vinegar
¼ cup Sugar
½ teaspoon Salt
¼ teaspoon Ground black pepper

Directions

1. In 5-quart Dutch oven or kettle, melt butter over medium heat. Add onion and saute 5 minutes. Stir in cabbage, apple, water, vinegar, sugar, salt, and pepper. Cover, increase heat to high, and heat cabbage mixture to boiling, stirring occasionally. Reduce heat to low and simmer mixture 45 minutes or until cabbage is tender, stirring occasionally.

2. Spoon cabbage mixture into serving dish. Or when made ahead, cool cabbage mixture and transfer to a microwave-safe container. Cover and refrigerate until ready to reheat.
