California-style barbecue sauce`

¾ cup Granulated Sugar
½ cup Japanese Soy Sauce
½ cup Tomato Catsup
½ cup Dry Sherry
3 Cloves Garlic -- crushed
1 teaspoon Ground Ginger
½ teaspoon Pepper -- freshly ground

Directions

1. In a medium bowl, stir all ingredients until combined. Ccver and refrigerate until ready to use. (The sauce can be prepared up to 3 days ahead, covered, and refrigerated.) Note: This sauce shows the influence of Asian ranch cooks. Makes about 1½ cups from Hearst Ranches of San Simeon, CA.
