Chicken mushroom saute

4 | Chicken breast halves,boned and skinned | |
½ | cup | Flour |
Salt and pepper to taste | ||
3 | tablespoons | Olive oil |
1 | tablespoon | Minced green onion |
1 | pounds | Tomatoes,peeled and chopped (drained,if canned) |
1 | teaspoon | Dried tarragon |
Directions
Clean and slice mushrooms. Set aside. Coat chicken breast all over with flour and shake off excess. Season with salt and pepper. Heat olive oil in a large skillet. Add chicken breasts and brown on both sides. Remove and set aside. Add onions and cook over high heat 1 to 2 minutes or until tender. Add mushrooms. Stir rapidly, still cooking over high heat, about 2 minutes. Add tomatoes and tarragon. Place chicken on top and simmer 12 to 15 minutes. Add water or chicken broth, if necessary to make a sauce. Serve with rice or noodles and green beans.
