1 | tablespoon | Bacon fat |
28 | fluid ounce | Catsup |
8 | Chipotles en adobo; minced | |
2 | tablespoons | Good chile powder; heaping |
2 | teaspoons | Cumin |
2 | teaspoons | Thyme |
6 | fluid ounce | Amber beer |
½ | cup | Cider vinegar |
2 | tablespoons | Prepared mustard |
1 | tablespoon | Worcestershire |
1 | tablespoon | Nuoc mam |
¼ | cup | Bourbon |
½ | tablespoon | Cocoa |
Black pepper; to taste |
Directions
Saute onions and garlic on med high heat until soft. Add everything else.
Simmer uncovered until thick.
