Cinnamon yogurt muffins

Ingredients

cup Unbleached flour
¼ cup Granulated sugar
teaspoon Baking powder
¾ teaspoon Baking soda
2 teaspoons Cinnamon
¼ teaspoon Nutmeg
¼ teaspoon Salt
1 Egg white -- whipped
½ cup Fat-free plain yogurt
3 tablespoons Applesauce -- at room
Temperature
teaspoon Vanilla

Directions

Preheat oven at 350. Prepare 8 muffin tins with cooking spray and flour. In a mixing bowl, combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. In another mixing bowl, combine remaining ingredients. Mix dry ingredients with wet ingredients just until moistened Use an ice cream scoop to fill muffin tins two thirds full. Bake 12 minutes, or until lightly browned.
