Cold thin noodles

Ingredients

1½ | cup | Chicken broth |
3½ | tablespoon | Soy sauce |
2 | tablespoons | Sugar |
1½ | tablespoon | Mirin* or dry sherry |
1 | tablespoon | Fresh gingerroot; grated |
8 | ounces | Thin Japanese noodles; cooked & chilled |
1 | cup | Cucumbers; thinly sliced |
1 | can | (11 oz) Mandarin oranges; drained |
¼ | cup | Cilantro; chopped |
Directions
* Mirin is a syrupy rice wine. Mix broth, soy sauce, sugar and mirin or dry sherry in a small saucepan.
Heat about 1 minute; stirring constantly, until sugar dissolves. Add gingerroot and chill.
To serve, pour over noodles; add cucmbers, oranges and cilantro; toss.
Makes 4 side dish servings.
