Cornmeal and wholemeal muffins

Ingredients

Quantity Ingredient
2 Eggs
2 cups Yoghurt
1 tablespoon Honey
1 tablespoon Oil
1 teaspoon Baking powder
½ cup Wholemeal flour
1 cup Fine cornmeal
1 cup Coarse cornmeal

Directions

Preheat oven to 375øF, prepare pans. Put the first four ingredients into a bowl and mix well. Add the remaining premixed ingredients & blend until just combined. Spoon into pans & bake for 15-20 mins. Makes 12. A hearty, healthy muffin!
