Cranberry waffles & orange sauce

Ingredients

2.00 cup Buttermilk biscuit mix
¼ cup Sugar
3.00 Eggs; beaten
cup Milk
3.00 tablespoon Shortening; melted
1.00 cup Cranberries, raw; ground
½ cup Sugar
2.00 tablespoon Cornstarch
1.00 teaspoon Salt
cup Water; boiling
1.00 tablespoon Butter (or marg.)
1.00 tablespoon Orange rind; grated
½ cup Orange juice
1.00 tablespoon Lemon juice

Directions

ORANGE SAUCE

Combine biscuit mix and sugar; stir in eggs and milk. Add melted shortening, mixing well; fold in cranberries. Bake in a preheated waffle baker, and serve with Orange sauce.

Orange Sauce: Combine sugar, cornstarch, and salt; add to boiling water. Cook 3 minutes, stirring constantly. Remove from heat; stir in butter orange rind, orange juice, and lemon juice. Yield: about 2 cups.
