Crisp squash-and-pepper toss

Ingredients

Quantity Ingredient
¼ teaspoon Dried whole basil
¼ teaspoon Dried whole oregano
¼ teaspoon Dried whole thyme
½ teaspoon Salt
¼ teaspoon Pepper
1 tablespoon Red wine vinegar
2 tablespoons Water
2 pounds Yellow squash; cut into 1/2 inch strips
1 large Onion; chopped
1 clove Garlic; minced
1 each Sweet red pepper; cut into 1/2-inch strips
2 tablespoons Olive oil
¼ pounds Kielbasa (Polish sausage) cut into 1/4-inch slices

Directions

Combine basil, oregano, thyme, salt, pepper, vinegar, and water in a shallow 2-½ quart casserole dish; add squash. Cover with heavy-duty plastic wrap; microwave at HIGH for 3 to 4 minutes. Let stand, covered, for 3 to 4 minutes. Add onion, garlic, sweet red pepper, and olive oil; toss gently. Cover and microwave at HIGH for 2 to 4 minutes. Add sausage, and toss gently; cover and microwave at HIGH for 1 to 2 minutes.
