Ingredients

Quantity Ingredient
2 pounds Yellow squash
2 Eggs; beaten
¼ cup Bell pepper; finely chopped
¼ cup Onion; finely chopped
1 cup Mayonnaise
1 cup Parmesan cheese
Salt and pepper to taste
Buttered bread crumbs

Directions

Recipe by: Come and Get It! by Jr. Welfare League of Talladega, Al Cook squash, drain. Combine other ingredients in a bowl. Add squash.

Pour into buttered casserole dish. Top with crumbs. Bake at 350 degrees for 30 mins.

Note: This can be frozen, but defrost thoroughly before cooking.
