Crunchy garden peas and green onions

Quantity Ingredient
5 tablespoons Olive oil
2 cups Shelled green garden peas
3 Green onions with stems; chopped
Salt and freshly ground black pepper
3 teaspoons Finely chopped fresh basil
3 tablespoons Grated imported Parmesan cheese
Hot pepper

Directions

Heat the olive oil in a large frying pan. Add the peas and green onions and saute 2 to 3 minutes. Add salt and pepper to taste. Add the optional basil, cheese and/or hot pepper flakes to taste. Cover the pan for 1 minute for young peas, longer for older ones. Serve hot.
