Easy spiced apple butter

2 | cups | Sweet apple cider |
¼ | cup | Light brown sugar |
¼ | cup | Butterscotch dessert mix |
½ | teaspoon | Cinnamon |
½ | teaspoon | Ginger |
½ | teaspoon | Nutmeg |
½ | teaspoon | Ground cloves |
2½ | pounds | Rome beatury (or similar) apples, cored and quartered, do not |
Peel. |
Directions
Cook first 7 ingredients in heavy overproof Dutch oven or other large kettle over low heat, stirring occasionally until sugar dissolves.
Increase heat and bring to a boil. Add apples and return to boil.
Cover and bake at 350F until apples are very soft and liquid has evaporated, stirring occasionally, aobut 2 hours. Cool slightly.
Puree in food processor or blender until smooth. Pack into clean glass containers with tight fitting lids. Store in refrigerator.
Makes 3 cups, 1 tbps per serving. Keep refrigerated. use as you would jam, jelly, or preserves. Origin: Watkins Food Gifts Cookbook Shared by: Sharon Stevens, Sept/94.
