Eileen fulton's \"wild\" grits

Ingredients

1 | cup | White hominy grits |
5 | cups | Boiling water |
1½ | teaspoon | Salt |
½ | teaspoon | Baking soda |
1 | cup | Parmesan cheese; freshly grated |
Freshly ground black pepper | ||
1 | Egg; beaten | |
1 | tablespoon | Milk |
½ | cup | Italian bread crumbs |
2 | tablespoons | Butter |
1 | Scant tsp. instant onion flakes |
Directions
Add grits to boiling salted water. Reduce heat, simmer 25-30 minutes, stirring occasionally. Cool for 30 minutes. Add baking powder, ¾ cup cheese, onion and pepper. Mix well. Combine egg and milk; add to cooked grits. Pour mixture into well-greased 2 quart baking dish. Top with breadcrumbs and remaining cheese. Dot with butter. Bake in preheated 350 F.
