¼ | cup | Oil; palm |
1 | cup | Onions; chopped |
2 | Eggs; hard cooked; chopped | |
1 | teaspoon | Chile, malageuta; minced |
2 | cups | Flour; manioc |
Directions
~----HEAT SCALE - MEDIUM-----
Heat palm oil in a frying pan and fry the onions until golden brown. Add hard-boiled eggs and saute the mixture for 1 minute. Next add the chiles and manioc flour, stirring constantly until the mixture turns golden.
Substitute piquin if malagueta chiles are unavailable. Note: if palm oil is unavailable, or a healthier alternative is desired, substitute vegetable oil with 3 teaspoons of paprika added.
