2 | Mild Italian sausages, sliced into 1/2 inch pieces | |
1 | Green pepper, cored, seeded and cut into chunks | |
1 | medium | Zucchini, sliced |
2 | Garlic cloves, minced | |
1 | (19 oz.) can tomatoes, including juice | |
2 | cups | Long-grain rice |
1 | (19 oz.) can black beans, rinsed and drained | |
1 | tablespoon | Chili powder |
1 | Bay leaf | |
1 | teaspoon | Leaf oregano |
1 | teaspoon | Salt |
5 | Green onions, thinly sliced | |
½ | cup | Finely chopped coriander (optional) |
Directions
Heat oil in a large saucepan over medium heat. Add sausages, green pepper, zucchini and garlic and cook, stirring frequently, until sausage is no longer pink. Add tomatoes and juice, crushing tomatoes slightly with the back of a wooden spoon. Stir in rice, beans, 3½ cups water, chili powder, bay leaf, oregano and salt. Bring to a boil, reduce heat to low and simmer, covered, 25 minutes.
Stir in green onions. Cover and continue to simmer 5 to 10 more minutes or until all liquid is absorbed. Stir in coriander. Yield: 8 Typed in MMFormat by cjhartlin@... Source: Modern Woman Magazine.
