Ginger and onion marmalade

Ingredients

2 | larges | Onions |
1 | can | Dry white wine |
1 | 2 inch piece root ginger | |
Olive oil | ||
1 | Sprigs rosemary | |
White wine vinegar | ||
Soft brown sugar |
Directions
Peel and slice the onions into 5mm rings. Heat 2tbsp oil in a pan. Add onions and rosemary and sweat the onions until soft.
Pour in white wine and vinegar, heat until the liquid has disappeared.
Serve cold or warm with bacon and cabbage.
