Ginger and onion marmalade

Ingredients

Quantity Ingredient
2 larges Onions
1 can Dry white wine
1 2 inch piece root ginger
Olive oil
1 Sprigs rosemary
White wine vinegar
Soft brown sugar

Directions

Peel and slice the onions into 5mm rings. Heat 2tbsp oil in a pan. Add onions and rosemary and sweat the onions until soft.

Pour in white wine and vinegar, heat until the liquid has disappeared.

Serve cold or warm with bacon and cabbage.
