Onion and ginger marmalade for the ham

Ingredients

Quantity Ingredient
6 larges Onions - sliced
3 tablespoons Dark muscavado sugar
2 tablespoons Ginger preserve
2 tablespoons Olive oil
2 tablespoons White wine vinegar
1 small Glass of dry white wine vinegar
½ teaspoon Chopped fresh sage

Directions

1 Soften the onion in oil - don't brown. Add the wine vinegar, reduce for 25 minutes and stir in the preserve and sugar until dissolved and caramelised.
