Ginger-mango salsa - (pac rim)

⅔ | cup | Diced red onion |
⅓ | cup | Chopped red bell pepper |
1 | Jalapeno chile pepper; or more | |
2 | teaspoons | Grated ginger root |
3 | tablespoons | Chopped fresh cilantro |
3 | tablespoons | Fresh lime juice |
1 | pinch | Salt |
Brown sugar; optional |
Directions
1) Peel mangoes, pit and dice.
2) Seed the chile pepper(s) and mince.
3) Combine all the ingredients, except sugar. Let the salsa sit 30 minutes or so to allow flavors to blend. Taste: adjust seasonings, adding sugar if necessary.
