Ginger-mango salsa - (pac rim)

Ingredients

Quantity Ingredient
2 Mangos
cup Diced red onion
cup Chopped red bell pepper
1 Jalapeno chile pepper; or more
2 teaspoons Grated ginger root
3 tablespoons Chopped fresh cilantro
3 tablespoons Fresh lime juice
1 pinch Salt
Brown sugar; optional

Directions

1) Peel mangoes, pit and dice.

2) Seed the chile pepper(s) and mince.

3) Combine all the ingredients, except sugar. Let the salsa sit 30 minutes or so to allow flavors to blend. Taste: adjust seasonings, adding sugar if necessary.
