This can be kept on hand for use for substituting directly into any
Recipe calling for all purpose wheat flour. If the recipe calls for 1 cup of flour, use 1 cup of the mix.
Sift together SIX times
2 cups Wheat starch
¾ cup Potato flour
¾ cup Corn flour
¼ cup Soy flour
1 cup Rice flour
6 tablespoons Arrowroot flour
6 tablespoons Tapioca flour

Directions

GLUTEN FREE FLOUR MIX

If you use this combination for baking, the time should be longer and the over cooler than the original recipe calls for. Blend together thoroughly. Use this in any recipe calling for all purpose flour EXCEPT for bread, gingerbread, doughnuts, fritters or shortbread, unless you have a special gluten free recipe. Origin: The Allergy cookbook.
