Grandma ida's blintzes

Ingredients

1½ | cup | Flour (or a bit more) |
3 | teaspoons | Sugar |
2 | Eggs | |
2 | pounds | Farmer cheese |
1 | pinch | Salt |

Directions
Combine filling ingredients well and set aside. Place flour in another bowl and make a well in the center. Place remaining ingredients in the well and mix to make a loose batter. Fry one side (as for crepes) in lightly greased pan until dryish on top. Turn out onto cloth, uncooked side down. (Should get about 15 pancakes.) Place some filling on each 'pancake'. Loosely fold opposite sides over the filling, then the remaining two sides. Fry in butter until brown, turn and fry the other side. (Or place folded side down in buttered baking dish, brush tops with butter and bake at 425 until brown.) Serve with sour cream and/or blueberry sauce, etc.
