Blintzes (cheese)

1 | cup | Flour |
pinch | Salt | |
2 | eaches | Eggs |
⅔ | cup | Milk |
FILLING | ||
1 | cup | Cottage cheese |
¼ | cup | Granulated sugar |
Few drops vanilla extract | ||
Oil or shortening, then butter | ||
Strawberry jam, or red currant jelly |
Directions
Sift flour and salt, beat to a thick creamy batter with the eggs and milk. Brush a thick skillet with oil or shortening. Heat fry pan, and fry pancakes until golden brown on both sides. Keep hot or store for later use. Fill with the cottage cheese blended withthe sugar and vanilla extract. Place some fillin gin the center of each pancake and roll up.
