Grilled banana maple rum sundaes

⅓ | cup | Plus 1 tablespoon maple syrup |
1½ | tablespoon | Dark rum |
1 | tablespoon | Melted unsalted butter |
4 | Bananas; ripe but firm | |
1 | pint | Low-fat vanilla frozen yogurt |
⅛ | teaspoon | Freshly ground nutmeg |
Directions
1. Prepare a medium barbecue fire. Oil the grill rack or coat with a non-stick vegetable spray.
2. In a small saucepan, combine ⅓ cup maple syrup and the rum. In a small dish, combine 1 tablespoon maple syrup and the melted butter.
3. Peel the bananas and cut in half lengthwise. Brush or rub the bananas with the maple syrup and butter mixture. Grill the bananas, turning once or twice with a spatula, 3 to 5 min., until the fruit is lightly browned and softened but not mushy.
4. While the bananas are grilling, heat the maple syrup and rum in a small saucepan set at the edge of the coals.
5. Scoop the frozen yogurt into dessert dishes. Cut the banana halves into quarters and place on the frozen yogurt. Pour the warm sauce over them.
Sprinkle with nutmeg.
