Gulf coast fried shrimp

Ingredients

2 | pounds | Unpeeled medium-size fresh shrimp |
4 | larges | Eggs, beaten |
⅔ | cup | Commercial spicy French salad dressing |
1½ | tablespoon | Lemon juice |
¾ | teaspoon | Onion powder |
Vegetable oil | ||
1⅓ | cup | Crushed saltine crackers |
⅔ | cup | Crushed corn flakes cereal |
⅓ | cup | White cornmeal |
Directions
Peel shrimp, leaving tails intact; devein if desired. Place shrimp in a large shallow dish. Combine eggs and next 3 ingredients; pour over shrimp, stirring gently. Cover and marinate in refrigerator 3 hours, stirring occasionally.
Pour oil to depth of 2 inches into a Dutch oven; heat to 375 degrees.
Combine cracker crumbs, cereal and cornmeal. Remove shrimp from marinade, discarding marinade. Dredge shrimp in cracker mixture, and fry, a few at a time, until golden. Drain.
