Herby cheese and potato cakes

750 | grams | Maris Piper or Desiree potatoes; cooked and mashed |

50 | grams | Butter; (2oz) |
175 | grams | Matured Cheddar cheese; grated (6oz) |
3 | tablespoons | Freshly chopped chives |
Salt and freshly ground black pepper | ||
25 | grams | Plain flour; for shaping (1oz) |
Oil for shallow frying |
Directions
Mix together the mashed potato, butter, grated cheese, chives and seasoning to taste. Chill the mixture for easy handling.
Shape the potato mixture with well-floured hands into 8 flattened triangle shapes.
Heat a little oil in a frying pan and fry the potato shapes in batches for 2-3 minutes each side until crisp and golden. Drain on kitchen paper and serve immediately.
