High country meatloaf

¾ | cup | Sundried tomato bits |
¼ | cup | Yellow corn meal |
3 | larges | Cloves garlic minced |
¾ | cup | Boiling water |
1½ | pounds | Lean ground beef |

⅔ | cup | Chopped green onions |
1 | cup | 4 oz. green chiles (mild) |

⅓ | cup | Chopped fresh cilantro |
1 | Jalapeno pepper chopped, | |
Seeded (optional) | ||
1½ | teaspoon | Salt |
¼ | teaspoon | Pepper |
Directions
In large bowl, mix tomato bits, corn meal, garlic and water, set aside 10 minutes. Add remaining ingredients. Mix with hands to blend thoroughly. In shallow baking pan or dish form a loaf with meat mixture. Sprinkle with small amt. of corn meal Bake 375 F. for 1 hr or until juices run clear. Let stand for 10 minutes before slicing.
