Honey plum sauce

Ingredients

Quantity Ingredient
2 cups Plums pitted; chopped
½ cup Honey
¼ cup Lemon juice
2 tablespoons Onion; minced
1 teaspoon Lemon zest; grated
½ teaspoon Fresh ginger root
¼ teaspoon Salt
¼ teaspoon Cloves; ground
¼ teaspoon Allspice
Salt and pepper; to taste

Directions

Combine all ingredients in a medium saucepan, bring to boil, reduce heat and simmer for 15 min. or until plums are completely cooked.

Puree mixture in a blender or food processor. Taste and adjust sweetness, adding more honey if nessary. return to saucepan and simmer for 5 min.

NOTES: Try this sauce as a baste for Duck, Spareribs, Chicken or Lamb.
