1 1 liter tub soft scoop dairy ice-cream
4 Crunchie bars; cut into small
; pieces
175 grams Ginger in ginger wine; roughly chopped,
; reserving 3
; tablespoons of
; liquor (6oz)
1 Traditional brandy snap baskets; ¥

Directions

Scoop the ice-cream into a bowl and combine with the crunchie bars, ginger and liquor, mix to incorporate. Place in the freezer to harden up again.

Transfer scoops of the ice-cream mixture into the brandy snap baskets and serve immediately.
