Hot smoked fillets of whiting with truffle vinaigrette

4 tablespoons Olive oil
1 tablespoon Sherry vinegar
2 smalls Fillets of whiting if not in SA)
1 tablespoon Truffle juice
Salt and pepper

TRUFFLE VINAIGRETTE

Season fillets and smoke over a mixture of wood chips until cooked.

Dress with chopped truffles and vinaigrette. To make vinaigrette: shake ingredients in a bottle to mix well. Tansy Good and Marc Bouten.
