Jalapeno cheese grits

2 | cups | Chicken stock |
2 | cups | Water |
1 | small | Garlic clove |
1 | cup | Quick-cooking hominy grits; not instant |
1 | cup | Grated cheddar cheese |
1 | Seeded & minced jalapeno peppers, (1 to 2), or to taste | |
Salt; to taste |
Directions
Place chicken stock and water in a medium saucepan over high heat. Bring to a boil. Stir in garlic and grits. Reduce heat and simmer, stirring frequently, for about 10 to 15 minutes or until thickened.
Remove from heat and stir in jalapenos and cheese until completely melted.
Season to taste with salt and keep warm.
Yield: 6 servings
