Jalapeno cheese grits

Ingredients

Quantity Ingredient
2 cups Chicken stock
2 cups Water
1 small Garlic clove
1 cup Quick-cooking hominy grits; not instant
1 cup Grated cheddar cheese
1 Seeded & minced jalapeno peppers, (1 to 2), or to taste
Salt; to taste

Directions

Place chicken stock and water in a medium saucepan over high heat. Bring to a boil. Stir in garlic and grits. Reduce heat and simmer, stirring frequently, for about 10 to 15 minutes or until thickened.

Remove from heat and stir in jalapenos and cheese until completely melted.

Season to taste with salt and keep warm.

Yield: 6 servings
