Quantity | Ingredient | |
---|---|---|
½ | pounds | Bow tie pasta |
1 | small | Cabbage |
1 | medium | Onion(s) |
4 | tablespoons | Butter |
3 | tablespoons | Italian parsley, chopped |
Salt and pepper |
Directions
1. Cook the pasta in a large pot of boiling, salted water until tender but still firm, 8-10 min. Drain well.
2. While the pasta is cooking, quarter the cabbage lengthwise and remove and discard the tough inner core. Cut the cabbage crosswise into 1-inch strips to make 5 cups; reserve the rest for another use.
Chop the onion.
3. Heat the butter in a large frying pan over medium-high heat, until melted and bubbly but not brown. Add the onion and cook, stirring often, until softened, 2-3 min. Add the cabbage and cook, stirring often, until bright green and softened, 3-4 min.
4. Toss the pasta with the cabbage and onion mixture and the parsley, adding salt to taste and seasoning generously with fresh ground pepper.
