Layered salad with cumin-honey vinaigrette - bon appetit

Ingredients

Quantity Ingredient
1 large Red onion, cubed
2 larges Avocados, peeled, pitted, cubed
1 large Red bell pepper, seeded, cubed
1 Cucumber, peeled, seeded, cubed
Cumin-Honey Vinaigrette
(separate recipe)
12 cups Mixed greens (such as curly endive, spinach & romaine)

Directions

Combine onion, avocados, bell pepper and cucumber in large bowl,. Mix in ¾ C vinaigrette. Let stand at room temperature 15 minutes.

Place greens in large bowl and toss with ¼ C vinaigrette. Season greens with salt and pepper. Arrange half of greens in clear bowl.

Top with half of vegetables. Repeat with remaining greens and vegetables. Serve, passing remaining vinaigrette separately.
