Light and hot sauce

Ingredients

Quantity Ingredient
1 large Ripe plum tomato, seeded/small
¼ cup Shallots or red onions, diced
1 teaspoon Minced fresh red chili, seeds & ribs removed, depending upon desired hotness
½ cup Fresh lime juice
¼ cup Rice vinegar
Salt, to taste
Freshly ground black pepper, to taste
2 tablespoons Fresh basil or cilantro leaves, chopped
1 teaspoon Fresh chives, snipped

Directions

Mix all the ingredients together and use within 1 to 2 hours. Serve alongside grilled snapper for generous spooning on top. Yield: 1 cup.
