Lima beans with ground beef

Ingredients

¾ pounds Baby lima beans
2 teaspoons Unsalted butter
cup Onion; finely chopped
1 pounds Ground beef
¾ teaspoon Turmeric
¼ teaspoon Cayenne pepper
¼ teaspoon Pepper
4 Scallions; sliced
2 cups Plain lowfat yogurt

Directions

Prep: 5 min, Cook: 30 min.

Blanch lima beans in boiling water 3-4 minutes or until almost tender.

Drain thoroughly. Melt butter in a heavy nonstick skillet over medium high heat. Saut‚ onion 5-7 minutes or until golden. Add ground beef and saut‚ 3-4 minutes or until meat is lightly browned. Stir in lima beans, turmeric, cayenne and pepper and saut‚ 3-4 minutes or until lima beans are tender.

Reduce heat to medium low. Stir in half the scallions. Saut‚ 2-3 minutes, stirring constantly until scallions are softened. Remove from heat, sprinkle with remaining scallions and serve with yogurt.
