Lime milk sherbet

Ingredients

½ | cup | Milk |
½ | teaspoon | Salt |
1⅓ | cup | Granulated sugar 1/2 cup lime juice |
½ | cup | Milk |
2 | cups | Light cream |
¼ | cup | Fresh, frozen, or |
can | Lemon juice | |
2 | tablespoons | Grated lime rind |
Directions
Turn temperature control of refrigerator to coldest setting. Sprinkle gelatine on ½ cup milk in bowl. Let soften 5 min. Then set bowl over boiling water- stir until gelatine dissolves. Combine remaining ingredients; stir in gelatine. Turn into freezing tray- freeze until frozen 1" in from edge of tray. Turn into chilled bowl; with electric mixer or egg beater, beat until smooth, not melted. Quickly return mixture to tray- freeze until just firm. Then reset temperature control. Makes 5 or 6 servings. Note: This sherbet may curdle in the making, but when done it's nice and creamy.
