Mango mayonnaise and shrimp

Ingredients

Quantity Ingredient
½ cup Reduced-fat mayonnaise; or light mayonnaise
½ cup Mango puree; fresh or thawed frozen
¼ cup Light sour cream
¼ teaspoon Salt
teaspoon Pepper
2 tablespoons Lime juice
8 ounces Medium shrimp; cooked, shelled and deveined
20 Melba rounds or toasts

Directions

In small bowl, combine mayonnaise, mango puree, sour cream, salt, pepper and lime juice. Spoon mayonnaise mixture onto melba rounds; top with a shrimp.

Makes 20 servings. Preparation time: About 10 minutes.
