Mango under kiwis

Ingredients

Quantity Ingredient
2 Ripe mangoes; peeled and chopped
Dark rum; to taste, or lime juice
Superfine sugar or exotic honey, to taste, leatherwood honey from tasmania
4 Chilled kiwis; peeled and thinly sliced
Fresh mint leaves; for garnish

Directions

Puree mango through a food mill; season to taste with lime juice, sugar or honey. Spread puree on bottom of a chilled dessert plate and center kiwi slices in the middle; garnish with mint Yield: 4 servings
