Marinated snow peas and tomatoes

Ingredients

¼ | pounds | Snow or sugar snap peas |
1 | cup | Halved cherry tomatoes |
½ | cup | Sliced water chestnuts |
¼ | cup | Sliced green onions |
2 | tablespoons | Vegetable oil |
1 | tablespoon | White wine vinegar |
¼ | teaspoon | Salt |
½ | teaspoon | Granulated sugar |
Directions
MARINADE
Blanch peas in boiling water for 2 minutes. Drain and refresh under cold running water; drain well. Toss with tomatoes, chestnuts and onions.
(MARINADE): Combine all ingredients, whisking lightly. Pour over vegetables and toss. Chill until serving time. Drain and spoon vegetables into center of rice mould, if desired.
