Melon, mango or papaya salsa with chicken cutlets

Ingredients

Quantity Ingredient
1 Ripe mango; papaya or 1/2
; cantaloupe, peeled,
; seeded and diced
; (1/4-inch)
¼ cup Sliced scallion; green tops
¼ cup Diced red bell pepper
¼ cup Fresh chopped cilantro or basil leaves
2 tablespoons Fresh lime juice
1 tablespoon Jalapeno; chopped and seeded
; (optional)
1 pinch Salt; to taste

Directions

1. In a large bowl combine all the ingredients.

2. Taste and add more lime juice and salt, as needed.

3. Serve with grilled seafood (shrimp, salmon, tuna or swordfish) or pan seared chicken cutlets.
