Mexican mince (marguerite patten)

Ingredients

1 | small | Onion, peeled |
6 | ounces | British minced beef or lamb |
2 | tablespoons | Tomato ketchup |
8 | ounces | Can chopped tomatoes |
1 | teaspoon | Cliilli powder |
8 | ounces | Can red kidney beans |
5 | fluid ounce | Stock or water with |
¼ | Stock cube | |
3 | tablespoons | Canned sweetcorn |
Salt and black pepper |
Directions
Finely chop the onion. Place the meat and onion in a pan over a very low heat and dry fiy until golden. Ifthe meat is lean add 2 teaspoons oil. Add all the other ingredients (drain the canned beans and sweetcorn well) and simmer for 15 minutes. Serve with rice or pasta and a green vegetable.
