Middle eastern black bean salad

cup Cooked, Drained Black Beans
(1 cup dry)
½ cup Red Onion -- finely diced
1 large Tomato -- seeded and diced
1 small Green Pepper -- seeded and
Diced
1 medium Cucumber -- seeded and
Diced
½ cup Chopped Parsley
1 tablespoon Chopped Fresh Mint ---DRESSING------
¼ cup Lemon Juice
1 teaspoon Cumin
¼ teaspoon Salt -- (or to taste)
¼ teaspoon Pepper
¼ cup Olive Oil

Directions

Combine salad ingredients together and toss lightly. For dressing, add spices to the lemon juice and beat in oil. Pour over salad and chill for several hours.
